Gracilaria confervoides is a species of red algae found in coastal waters, particularly in tropical and subtropical regions. It is part of the Gracilariaceae family and is known for its long and branching appearance, which is typical of the Gracilaria genus.

Agar-agar is not technically a “gelatine” in the traditional sense, but it is often used as a plant-based substitute for gelatine in recipes. While gelatine comes from animal collagen (usually derived from pork or beef), agar-agar is a vegetarian alternative made from seaweed, specifically red algae.

Agar-agar is used to thicken or set liquids, creating a gel-like texture. It sets at a higher temperature and creates a firmer, more brittle gel compared to gelatine.

When used in cooking or food preparation, it does not impart any noticeable taste. This is one of the reasons why agar-agar is so popular as a substitute for gelatine in both desserts and savoury dishes

– Culinary use:

Agar agar is used as a vegetarian alternative to gelatine in a variety of dishes, including puddings, mousses and jellies, as well as in ice cream, chewing gum and cheesecake. It is an important ingredient in the Japanese dessert anmitsu, which calls for kanten jelly, a mixture of agar-agar, water and sugar.

– To make an infusion:

Pour 1 teaspoon of powder into a teapot containing 1 cup of water. Boil over medium heat and stir constantly until the agar dissolves. Once it boils, lower the heat and let it simmer for 2-3 minutes until it dissolves completely. Remove from heat and let cool slightly.

 

Storage: Store agar agar powder in a cool, dry place away from direct sunlight, heat, and moisture. Keep it in an airtight container to prevent clumping and protect it from absorbing odors or humidity. Make sure the container is tightly sealed after each use to preserve its gelling properties and freshness. No refrigeration is needed unless specified on the packaging.
