Cayenne powder blends are composed chiefly of sweet paprika 120 ASTA and chilli powder. The cayenne pepper is a type of Capsicum annuum. Capsicum annuum is a species of flowering plant in the Solanaceae family and it includes varieties like chili peppers. Native to Central and South America, this plant is widely cultivated around the world for its edible fruits, which can range from mild to very hot depending on the variety. Cayenne is used in cooking spicy dishes either as a powder or in its whole form. The modern kitchen has found a special place for the cayenne pepper. Fresh, it’s a terrific culinary chili, bringing a medium-heat (30,000 to 50,000 Scoville heat units) with a neutral, peppery flavour.
