Fraxinus ornus, commonly known as manna ash, is a tree native to Southern Europe and parts of Asia Minor. It belongs to the Oleaceae family and is primarily known for producing manna, a sweet, viscous sap that exudes from the trunk and branches. The name “manna” originates from its historical association with the miraculous, sweet substance mentioned in the Bible, which God provided to the Israelites in the desert to sustain them during their journey through the wilderness. This sap has a mildly sweet flavour, resembling honey or maple syrup, and was historically used as a natural sweetener.
