The colouring, scenting, flavouring and medicinal properties of saffron are due to two basic (acting) components: picrocrocin and crocin, especially in the unsweetened parts of them i.e. in the safranal of the first and the crocetin of the latter. Other ingredients of saffron are lycopene, zeaxanthin, a, b and c-carotenes, vitamin B and B2, carbohydrates and essential oil. Saffron, when taken correctly, is effective at treating mild to moderate depression. Saffron can help you sleep if you have trouble sleeping. Saffron is thought to help fight cancer by entering the cancer cells and sending them a signal to commit suicide (known as Apoptosis), thus leading to the cancer dying off. Some possible side effects include dry mouth, anxiety, dizziness, drowsiness, nausea, change in appetite, and headache. Allergic reactions can occur in some people. Taking saffron by mouth in amounts larger than what is normally found in food is unsafe. Larger amounts of saffron can make the uterus contract and might cause a miscarriage. Not enough is known about the safety of using saffron during breast-feeding. Stay on the safe side and avoid use.
