Tussilago farfara, commonly known as coltsfoot, is a perennial herbaceous plant native to Europe and parts of Asia. It belongs to the Asteraceae family and typically grows in damp, gravelly soils along riverbanks, roadsides, and disturbed areas. The taste of coltsfoot can be described as bitter and somewhat astringent. Coltsfoot leaves/flowers have a distinct aroma that is often described as mildly aromatic and somewhat sweet. Some people liken the scent to that of hay or freshly mown grass.

To make an infusion, steep about 1-2 teaspoons of dried coltsfoot flowers/leaves in a cup of warm water for 5-10 minutes. You can sweeten it with honey if you like.

For a syrup, simmer dried coltsfoot flowers/leaves in water for about 30 minutes, then strain the leaves and add honey or sugar to the liquid. Take a spoonful of the syrup as needed to relieve cough and throat irritation.
