Gentiana lutea L., commonly known as yellow gentian, is a perennial herb native to the mountainous regions of central and southern Europe, particularly the Alps and the Balkans. It belongs to the Gentianaceae family and is renowned for its bright yellow flowers and large, robust roots. Yellow gentian root powder has a very strong, intensely bitter flavour. Because of its extreme bitterness, yellow gentian root powder is often used in small amounts in digestive bitters, and liqueurs.
